Chipotle: Obsession In Recycled Paper Bowl Form

Shok and myself probably visit Maria, Jaime and the rest of the gang over at Chipotle #31 at least 17 times a week. Each. Nothing beats the routine…”I’ll have a bowl; to go please; yes rice, light black beans; chicken; a little more chicken please; a little more (perverted wink); no, I don’t want double chicken; lettuce; cilantro from the back; don’t lie to me I know you are allowed; pico de gallo please; and some medium salsa; perfect, gracias mi amor.” That right there folks, is the perfect recipe for the perfect meal. And by no means can you forget the guacamole, but don’t let them sucker you into the chips because they SUCK.

So I came across ChipotleFan.com earlier today, and here addicts like Shok and I can learn about nutrition info (yes, sour cream is fattening), you can build your own burrito with the patented “Burrito Generator,” or you can even get recipes for your favorite goodies so you can make them at home — ya right. After the jump is a recipe for the cilantro-lime rice — the most bad-ass ingredient of all. Just ask Shok, he won’t even settle for anything less than fresh rice, even if it takes Jaime 7 minutes.

Chipotle Cilantro-Lime Rice

1 teaspoon vegetable oil or butter
2 tsp. fresh cilantro
2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 Lime

In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Fluff rice with a fork.
